The Blue Bar at The Berkeley has created ‘Out Of The Blue’ to take guests on an explorative journey of taste by stimulating the senses through a combination of the finest ingredients and bespoke technology. In partnership with Bacardi Limited, ‘Out Of The Blue’ - which launched on 15th November - gives up to four guests the exclusive opportunity to try curated cocktails in a secret space within the heart of the hotel where tailored technology, culinary science and mixology will meet to enhance the perception of flavour through sight, sound and scent.

Every good barman knows that a cocktail is more than the sum of its parts. While the elements of a drink may stay the same, the taste can be enhanced or even transformed by the surroundings it is enjoyed in. It's the reason why a Daiquiri will often taste better whilst watching the sunset on a beach overlooking the Caribbean Sea, rather than at home in the kitchen. Experimenting with how the context of a drink affects flavour, the team at the Blue Bar has taken this theory a step further to curate a controlled environment that allows guests to explore flavour within a space where their senses are stimulated simultaneously. 

At ‘Out Of The Blue’ up to four guests will be collectively immersed through a first of its kind technological collaboration between projection experts Igloo and sensory specialists Sensiks. Guests will enter a 360-degree projection environment where specially-designed film and molecular scents combine with bespoke cocktails, to craft a bar experience which blurs the lines between scent, sight and taste, creating a synesthetic immersion completely new to the London cocktail scene.

Taking inspiration from the Blue Bar’s True Colours menu, a set menu of four taster-sized cocktails has been created by the Blue Bar team using select premium spirits from Bacardi Limited portfolio (BOMBAY SAPPHIRE gin, GREY GOOSE vodka, BACARDÍ OCHO rum and ABERFELDY single malt scotch whisky) with the addition of Laurent-Perrier bringing an effervescent effect to one of the four. The cocktail sequence will interlock to create a coherent flavour experience, tantalising the taste buds through a journey where light acidity and sweetness is balanced by potency and depth. 

By stripping away the traditional cues, the ‘Out Of The Blue’ experience will bring a focus on ingredients, allowing connoisseurs the chance to explore taste through a blank canvas and experience cocktails like never before.
