On 4th October M Restaurants will be hosting an exclusive Korean & World Class Kombucha Cocktails paired menu at M Victoria Street in the RAW restaurant.
As well as showcasing some exceptional Korean cooking from Executive Chef Mike Reid, each course will be accompanied by a Wild Fizz kombucha cocktail featuring World Class spirits, expertly concocted to complement each dish.
The evening will begin with a snack of Kimchi Pancakes, accompanied with an aperitif entitled Blood, sand & kombucha which sees Don Julio Blanco Tequila and red vermouth paired with blood orange kombucha and orange peel. To start, guests will be presented with Yook Hwei, a Korean steak tartare with egg yolk, soy and Korean pear, alongside Bucha Collins, a play on a traditional Tom Collins combining Early Grey lavender tea infused Tanqueray No TEN gin with lemon juice and ‘Lavender Fields’ Kombucha. Next up Mandu - Korean dumplings with fermented chilli and spring onions - will be served with Bucha Storm, a punchy mix of Ketel One vodka, bergamot syrup, ‘Gingers Rule’ Kombucha, cucumber and turmeric. The main event comes in the form of Bulgogi a marinated barbeque beef with Negrucha, a Wild Fizz twist on a classic Negroni. Finally, to finish, an indulgent white chocolate ice cream dessert with black sesame, yuzu and matcha will be accompanied by a Kombucha Gimlet, a fragrant blend of Jasmin pearl tea infused Ketel One Vodka with ‘Jasmin Dreams’ kombucha, and jasmine pearls.
