Foraging With The Botanist Gin

Before London Cocktail Week we had the pleasure of joining The Botanist Gin for an amazing London foraging trip in Peckham Rye Park. Here's what we uncovered...

Locally sourced ingredients always taste better, and even more so when you have gathered them yourself. A pioneer in the foraging movement, The Botanist Gin gathered chefs and bartenders from the most renowned bars and restaurants in London including Sager + Wilde, Three Sheets, The Lyan Group to embrace their wild side and discover the edible delights that are growing in the capital’s urban jungle.

Led by professional forager Mark Williams and The Botanist Gin’s ambassador Abigail Clephane, the group included Sager + Wilde bartender Marcis Dzelzainis, Rosey Mitchell from Three Sheets, Robin Honhold from The Lyan Group and Craig Grozier, renowned Scottish chef founder of Fallachan and in house chef for The Botanist Gin.

Rummaging through the undergrowth we discovered edible mushrooms including mousserons and chicken of the woods. There was an abundance of ingredients that offered surprisingly exotic notes such as hints of pineapple from pineapple weed, coconut flavours from fig leaves and hints of grapefruit from the Douglas Fir pine. Also unearthered were varieties of the tomato plant family, mustard plant and hogweed.

We then headed to Nick Weston Tree House, Hunter Gather Cook in Sussex to learn how to make fire from scratch and brainstorm and develop recipes for the London Cocktail Week pop-up.
