Spring might not quite be in the air, but there’s a whole host of fresh looks for menus across the capital. With sustainability, seasonal ingredients and zero waste products the hot topic of the industry right now, these are three of our favourites that have just launched. And one that’s imminently incoming!
Scout takes its drinks seriously – and this menu is focussing on eco-systems – both terrestrial or aquatic. Within these two categories they’ve gone one step further and have split the drinks into three – Grasslands and Forests, Freshwater and Marine and Towns and Cities. Add to this that each of the drinks we have created contain ingredients and elements that have either been re-used or those which society tells us are past their best and for the most part, are discarded without a second thought – and you’re basically doing good by drinking there.

The Natural Philosopher, Bethnal Green
Recently under new ownership, this clandestine little bar has a new menu focusing on drinks with health benefits. Go all out and order the Spirulina, a green cocktail containing all the health benefits of algae, mixed with Monkey Shoulder Peated Scotch, Green Chartreuse, and Lemon Oils. Or their BARLEY WATER aims to help lower cholesterol and blood sugar. Gotta be good right?
Swift, Old Compton Street, Soho
Swift on Old Compton Street was recently crowned the best bar in the UK at our industry awards night and quite rightly so. Perfect for most times of the day – this bar of two halves can be great for an afternoon spritz or a late-night snifter. Their new menu is a nod to it’s salubrious location in the heart of Soho with a nod to coffee, music and the LGBTQ community!
We’re fans of THE WINDMILL - inspired by Soho’s infamous Windmill theatre just a stone’s throw from the bar and is best known for its nude tableaux vivants from 1932 where performances involved fan dances as nudity was forbidden.Lot 40 Rye, Martini Ambrato, Caperitif, Banana
AND ONE TO LOOK OUT FOR;
In April Lyaness, by internationally renowned bartender Ryan Chetiyawardana (aka Mr Lyan) will launch its new menu. The concept at the heart of the menu will remain the same and be centred around a collection of five ‘core ingredients’, however the latest iteration will see four new additions, all of which have been crafted by the Lyan team using interesting and unique processes. Since launching, Lyaness has been unique within the bar world for its cocktail menu. It is designed to give more autonomy to the guest and allow them to play around with the different ingredients to find their perfect cocktail.
Whilst the menu features three suggested serves alongside each ingredient, these are designed to be a guide but are not meant to be prescriptive and instead guests can add flavours to their favourite drinks to make their ultimate cocktail. We. Can’t. Wait.
